Recipe of the Month - February 2026: Blueberry Granola Chia Seed Parfait

Makes 3 Servings

Ingredients:
1 cup Frozen Blueberries (or berries of choice)
1 &1/3 cups Plain Greek Yogurt
2/3 cup Chia Seeds
1 cup Granola

Directions:
1. In a small saucepan over medium heat, add the blueberries and cook for three to five minutes, until softened and saucy. Remove from the heat to cool slightly for about five minutes.
2. Add the blueberries, yogurt, and chia seeds to a food processor and process until smooth. Refrigerate for at least 1&1/2 hours or overnight to set.
3. Layer the chia pudding with the granola into glass containers or bowls. Enjoy!

Notes:
-Leftovers - refrigerate in an airtight container for up to three days.
-Serving Size - one serving is approximately one cup.
-More Flavor: Add maple syrup or honey to the chia pudding
